Here I also want to tell everyone that the foaming rate and taste of bird's nest are not determined by the color of bird's nest, so don't just look at the appearance when choosing bird's nest.
However, if they are all natural bird's nests, the color is good, the more beautiful ones will be more sought after, and the price will be higher. This is human nature.
2 Smell
The normal smell of bird's nest is a bit like egg white. The smell of dried bird's nest is lighter. You can spray some water on the dried bird's nest and smell it. The fishy smell will be more obvious, but it will not be a heavy musty or pungent smell.
If the bird's nest smells like a little musty, it is normal as long as it is not too strong, because the bird's nest is a simulating natural cave environment, which is relatively humid, and the fresh bird's nest will be processed immediately and will easily have a musty smell.
And for international long-distance transportation, in order to prevent shattering, it is necessary to spray some water. It is also not conducive to the dissipation of odor. Generally, the musty smell will be lighter after the bird’s nest is opened and dried until it slowly dissipates.
However, if the bird's nest has a pungent smell, then I am sorry, please come to me, because you have been cheated, the bird's nest you bought is treated with hydrogen peroxide and other bleaching agents.
Bleaching is no secret in the bird's nest industry. Some people use it for two reasons. First, bleaching can quickly remove hair, greatly simplifying the process of picking and saving costs. Second, in order to meet this demand, many customers like white and beautiful Bird's nest.
3 Look at the Foaming Rate
Natural bird's nest's foaming multiple that is 6-8 times is the normal range, and a small part can reach 9 times or more.
If it is less than 6 times, the quality of the bird’s nest is poor. If the bird’s nest you bought can’t be soaked for a long time, or the soaking rate is only 2 to 3 Double, then unfortunately, the bird’s nest you bought may not be the bird’s nest. It's an imitation of bird's nest.
The foaming rate of bird's nest is not as high as possible, because as long as it is foamed for a long time, it may cause the loss of nutrients and affect the taste.
Soak Yanzhan for 4~6 hours, while Yanjiao needs to soak longer, 8~10 hours.
At the same time, you need to pay attention to the water after soaking. After the natural bird's nest is soaked, the water is relatively clear, with only a few bird's nests and impurities. If the water becomes turbid, it is also a pity that there is obvious behavior of brushing glue and water.

4 Cooking and Eating
When the bird's nest is well soaked, it can be simmered, preferably over water. It can be stewed, or it can be stewed with red dates, white fungus, wolfberry and other ingredients. Generally, it can be stewed for 25 to 30 minutes.
